Vegan Oatmeal & Choc Chip Cookies

The weekend has been swept from under our feet once again ! If your lucky you managed to get a few things done. I was semi-productive….celebrated Friday at a rooftop (standard protocol when it gets warm in the city), worked out with my favorite PT and friend Sami, cleaned my apartment, had brunch with my bestie Ola and watched more Sons of Anarchy (season5 episode 5).. Is it just me or is Gemma starting to get real annoying with the ‘protect my family’ line?? …. Oh, I listened to the new Beyonce album too – it was great but a lot more slow jamz this time. 

So here we are and it’s Monday already! I was thinking of topics to write about and realized a recipe is long overdue. I also recently copped this awesome sweater, no surprise then, that I want to share with you my favorite cookie recipe!

.. And yes, this is me in my neighborhood, taking a random photo in the street! It’s a glorious time though, tulips are in full bloom and the trees are boasting beautiful cherry blossom 🙂 .. you should want to go out and take photos!

Back to food….. my favorite baking recipes always seem to be Vegan based and since it was recently Earth Day this weeks recipe is no exception.

I adapted the classic oatmeal raisin cookie, replacing raisins with dates and adding a chocolate chip spin because … chocolate!

The usual vegan suspects: flax seed and coconut milk make for a great substitute to dairy and dates reduce the sugar you need. This recipe really packs a nutritious punch, feel no guilt for eating the whole batch, but sharing is caring so please spread the love like I did (yeah right…).

Yield: 20 Cookies:

INGREDIENTS:

coconut oil (to line baking sheet)

1 tablespoon ground flax seed

2 tablespoons water

2 cups old fashioned oats

1 cup all purpose flour or whole wheat pastry flour (either works well)

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup coconut palm sugar

1 teaspoon vanilla extract

1/2 cup coconut milk

1 cup pitted dates – chopped

3/4 cup semi-sweet cacao chocolate chips

Prep time: 10 mins

Total time: 30 mins

MAKE IT:

1. Pre heat oven to 350 degrees and line a baking tray with parchment paper coated thinly with coconut oil

2. In a bowl, combine oats, cinnamon, baking soda, salt & sugar. Stir flax seed into 2 tablespoons of water and add to mixture

3. Add flour, dates, vanilla extract and chocolate chips to above and combine. Stir in coconut milk until dough-like consistency

5. Using a 2 tablespoon measure, place cookie dough onto baking tray and bake for 20 minutes or until golden

Cookies for days……!
